Polysaccharides are one of its important active components, which have been widely studied and applied. In this study, water extraction and alcohol precipitation method were used to extract polysaccharides from P. eryngii, followed by further purification by gel chromatography, and finally prepared into granules. The results showed that the extraction rate of polysaccharides from P. eryngii reached 14.2% after sulfuric acid fumigation pretreatment; after gel chromatography, the purity of polysaccharides reached 90.8%. The prepared granules had good physical and chemical properties and stability after quality evaluation and stability evaluation, which were suitable for application in the pharmaceutical and health food industries.
