Resultsshowedthatthehighestyieldofpolyphenols(23.54%) wasachievedwiththeextractiontemperatureof80℃,extraction timeof120minutes,andethanol/water(80/20)astheextraction solvent.Theantioxidantactivityofthepolyphenolextractwas determinedusingtheDPPHradicalscavengingassay,andthe resultsshowedahighlevelofantioxidantactivity.Thesefindings suggestthattheextractionprocessofpolyphenolsfromMeitan tealeavescouldbeaneffectivemethodforobtainingbioactive compoundswithantioxidantproperties. Introduction: Tea,apopularandwidelyconsumedbeverageworldwide,is madefromtheleavesoftheCamelliasinensisplant.Itcontains variousbioactivecompounds,includingpolyphenols,whichare knowntopossesshealth-promotingproperties.Polyphenolsintea arelargelyresponsibleforitscharacteristictaste,aromaand medicinalvalues.Theyhavebeenwidelystudiedbecauseoftheir antioxidative,anti-inflammatory,andanticanceractivities.In recentyears,therehasbeengrowinginterestindevelopingan efficientandsustainablemethodofextractingpolyphenolsfrom teas.Therefore,thisstudyaimedtoinvestigatetheoptimal extractionprocessofpolyphenolsfromMeitantealeaves.
